Café au lait (French for "coffee with milk") is a French coffee drink.  by wikipedia




This is not the case in Europe, where the two terms are used more as an indication to whether the beverage is served in the "French" or the "Italian" way (the former being in a white porcelain cup or bowl, the latter in a kitchen glass, and always served from the espresso machine).



New Orleans style
Café au lait in New Orleans has been popularized in part by Café du Monde. There, it is made with milk and chicory, giving it a strong, bitter taste. Inclusion of roasted chicory root as an extender in coffee became common in colonial Louisiana, and eventually was incorporated in its local variant of the French-style coffee drink. The bitterness of the chicory offsets the sweetness of the powdered-sugar-covered beignets, a common accompaniment.

Example Recipe for Café au lait
Literally "coffee with milk", café au lait is a drink made of coffee and scalded milk in a ratio of 1:1. It is the staple coffee drink of French Louisiana and is often served in bowls in Acadiana.

5 Tbsp (70g) Coffee grounds, can be: Dark (French) roast coffee or Coffee and chicory blend
3 Tbsp (42g) ground coffee and 2 Tbsp (28g) ground chicory, mixed
OR: 1.5-2 cups (350-475 ml) cold coffee concentrate
4 cups (950 ml) milk

1. Prepare four cups of coffee in your preferred manner -- drip, boil, seep, etc. If you are using coffee concentrate, add enough hot water to reach four cups of coffee.
2. At the same time, heat the milk over a low to medium heat until scalded.
3. Pour equal amounts of coffee and scalded milk into bowls or cups.  4. Enjoy.

Variations
Steamed milk can be substituted for scalded milk.
The milk can be heated in the cups by half filling each cup with milk and microwaving briefly. A 1,000W microwave oven will heat one half-cup of milk in 50 seconds, two in 60 seconds.
