  Cake Categories!
In honor of all National Cake Holidays, we provide this page for further research on the subject of cakes!

Cakes are broadly divided into several categories, based primarily on ingredients and cooking techniques.

Cake Definitions:  A cake is a form of food that is usually sweet and often baked. Cakes normally combine some kind of wheat product, a sweetening agent (commonly sugar), a binding agent (generally egg, though gluten or starch are often used by vegetarians and vegans), fats (usually butter or margarine, although a fruit puree can be substituted to avoid using fat), a liquid (milk, water or fruit juice), flavours and some form of leavening agent (such as yeast or baking powder).

The photo above is a Mille-feuille pastry (millefeuille cake) made of several layers of puff pastry alternating with a sweet filling, typically pastry cream (custard), but sometimes whipped cream, or jam. It is usually glazed with icing or fondant in alternating white and brown (chocolate) strips, and combed.
