HILLBILLY GRITS

Ohhhh we wouldn't go nare ah week without eatin grits.  We eat's it ferr breakfast pored over our fried eggs, we eat's um all cheesed up with fried fish at supper time and we eat's um as ah dessert with sugar pored on top too!

Here's what I figore ya need:
1 cup grits
3 cups water
1 cup ah milk
1 teaspoons salt
1 tablespoon butter

First you needs ta go get a bag ah grits from the local griss mill.  This is the real thang and not that there instant stuff.  Maw says ya get your water ta boilin on a medium boil first.  When it is den ya pore in ya cup ah grits in real slow.  Maw says ta make sure ya never stop stirrin now.  To make your grits nice and creamy jess add a few spirts from the cows tits.  You can use dat there can stuff if ya wants to but the best cream will be the better.  Now we knows the instructions on grits will tell ya to boil ferr a certain amount of time but Maw says to tell ya that what ever them directions say..... ta make sure ya double that boilin time.  Now if your boilin is goin to fast denn it will be spittin out grits like firein rat shot at foxes in the hen house!  And talk bout hurtin!  Why them grits will stick to ya like white on rice so it's best ya make sure ya got your boilin temp jess right.  Now, put your salt in and your butter in and surve it up while its hot.  If you lets it get cold it will soon look like jelled jello and youins don't want dat.

HILLBILLY BAKED CORNMEAL PUDDIN'

You jess don't see folks cookin this dish much anymore unless youins a oldtimer.  Maw still cooks it ferr me cause I loves it so.  Most mountain people jess loves molasses and this here dish has plenty in it.  The chillins even loves it in our family so why don't cha give it a try.

Here's what I figore ya need:
2 cups ah cornmeal
1 cup ah flour
2 well beaten eggs
1/4 cup ah shortenin
1 cup ah sorghum molasses
1/4 tsp. allspice
1 tsp. soda
1 tsp. salt
1 cup ah buttermilk

Maw says sift your meal first real good.  Mix all them dry ingredients real good too.  Add them eggs, milk, molasses and shortenin.  Mix um all together good.  Iffin its too stiff.... addin jess a bit more milk will do jess fine.  Bake in a well greased black cast iron skillet or what ever ya have.  Watch it get golden brown and when it does, poke it with a toothpick ta see iffin it comes out clean er not.  (Most mountain women keep toothpicks in their mouth at all time so this aint gone be no problem findin one)  Iffin the toothpick comes out clean den tha puddin is done.  

Servin Suggestions:
well..... we likes ta spread butter on it or in it and then sop up the juice from our baked beans when weins are havin a grillin day.  It tastes jess perfect!.  Them snooty valley people likes ta put fruit on top and eats it dat way.  Either way youins will like it.

Varmit BBQ Bites

Welllll Hi to ya all once again.  It's me Paw and weins all know dat it's summer time now so we spend lots ah time down at the old swimmin hole either swimmin, fishin or bathin.  When we do.... we likes ta grill too.  Why nutton beats it dats ferr shore!  Now if youins don't mind workin a bit.... den you can catch yoreself some must rats in dat there waters edges and youins can grill um up with the rest of tha varmits dat ya caugh that day.  Yep youins shoreee can. 

What cha need
Your choice of a several types ah meat such as musk rat, racoon, possum, chicken, and it must be skinned, boned and cubed in large cubes.  You take all them varmits and cube um all up and dump um all in a deep pot cause they gots ta do some soakin in equal amounts ah whiskey, goat milk (or buttermilk), vinegar (apple vinegar) and wooster sauce.  We wants ta draw out some of da wild taste and get it all tender at the same time.  Stick it in the edge of the creek water so it will stay cold but far enough away ferr the youngons splashing water.  After ya soak it ferr a couple ah hours, denn pore tha liquid off in a bowl ferr thah dog ta drink.  He'll like it.  Note: you can use dis same recipe ferr a mix of big meat too. You know.... cow meat or goat meat, dear meat or pig meat.  They aint no varmits but you can mix them in too and they will be jess as good.

Now pore more whooster sauce on top of tha meat along with a splash or two of some homemade redwine. Dump in some fancy mustard and some brownsugar and toss it all up.  Youins can ad a jar of your Maws homemade tomato sauce to and it makes it taste really good.  If you aint got it, denn use a can of tomato soup.  If youins aint got none of this..... denn jess go to tha store and buy a bottle of bbq sauce and pore it on and be done with it!  Now let all the flavors mingle for another hour.  After that you aint gonna be able to tell a chicken bite apart from a musk rat bite.  

Now whiddle the end off of ah really good stick and make ah sharp point to it.  Use diss tah poke each of ya large cubed meat pieces and place it on the greased rack that cha have sittin over the hot fire dat cha built.  K
Watch each of um simmer until the edges start ta crispin up on the edges.  Gat them charred marks on it now.  When they do.... denn poke um with your stick and dunk um back in the bbq sauce dat ya made and flip um over an the other side on tha grill.  When ya see thah meat crispin up on thah edges again....... den woooooo whooooo they are ready!  You jess can't beat these varmit bbq bites!  You jess pop um one by one in youins mouth and eat um up.

Bake some taters in the hot coals while the meat is cookin too.
Have ya Maw ta bake a hooe cake in a black skillet (on tha grill rack) while thah meats cookin too.
You aint gots ta have no tensils ferr none-ah this food either.  If you get's company that shows up before tha cookin is done.... denn jess whiddle up a few more poke sticks.

Mountain Walnut Cookies

Howdyyyy Folks! We got lots and lots ah youngons dat live here on the mountain and all-of-um demand ta leave Santa Maws special Mountain cookies.  Weins have ta make shore dat we fix plenty cookies to feed all them youngons too ferr Christmas.  Anyways, Maw has decided to give ya here special recipe dat she fixes just at Christmas time.

Note: Da nutmeg in this here recipe give ya dat holiday flavor.  Why youins can add some raisins and a pinch ah cinnamon in um too if you's wants.  Iffin you do, den you needs ta call um Holiday Mountain Cookies ya here!

1/4 lb. butter, softened
1 cup all purpose flour
1 tsp. vanilla
Pinch ah ground nutmeg
1/4 cup confectioners sugar
3/4 cup chopped walnuts
1/8 tsp. salt

Maw says-- Preheat yours oven ta 300 F.  In a mixin bowl, cream your butter and sugar until light n' fluffy.  Stir in remaining ingredients and get your fingers into it.  Mix by hand.  Roll dough into 1 inch balls and if your man don't behave.... youins can through a few balls at him.  Place balls on a lightly greased cookie sheet, pressing each ball with the heel of yours hand or with a fork until balls are about 1/2 inch thick.  Tell them youngons dat the reindeer stepped on um.  Bake 20 minutes or until da bottoms are golden brown.  Makes about 18 Mountain cookies.

Apple Butter Pumpkin Pie

Howdyyyy Folks! Weins still chasin dat dog gone turkey!  Maw was gonna tell ya how ta cook um over da fire since its Thanksgiving ann all...but we aint caught dat winged cridder yet.  Anyways, Maw says shell jess tell ya how ta make "Apple Butter Pumpkin Pie" instead since its a Thanksgiving favorite in our clan too.
Iiiis told Maw ta cook one of them there Mincemeat Pies dat has da brandy in it. Ummmmm Ummmm!  But Maw says she aint gonna do it cause her last one watten fitten ta eat. She says dat it tasted like she used the whole bottle ah brandy in it and she didn't like it. Whyyyy Iiiiins thought by me addin a bit more to her mix dat it would make it taste much more better. Don't yall tell Maw that Iiis was da one who did it now, ya here.

Note: If youins like pumpkin you autay think about plantin a patch of um.  If ever theres a crop dat will grow good furrr ya it'll be pumpkin furrr shure.  Why youins will have so many pumpkins till you wont know what ta do with um all.

1 cup cooked pumpkin and mashed
1/3 cup brown sugar
1/2 t. cinnamon
1/4 t. ginger
1/4 t. nutmeg
2/3 cup evaporated milk
1 cup ah homemade apple butter
1/4 t. salt
3 eggs from da hen house
1/3 cup ah milk from da cow (city folks can use grocery store milk)
Whipped cream
9" pie shell

Now..... get youins a big ole bowl and put da pumpkin, apple butter, brown sugar, cinnamon, salt, ginger, and nutmeg in it and mix it. Add your eggs in. Now beat them there eggs into da pumpkin mixture. Stir in da evaporated milk and dat milk from da cow. Now Maw says ta pore it all in a unbaked pie shell. Cover them edges of the shell wit foil cause youins dont want it ta get to brown. Bake at 375 ferr 25 minutes. Dennnn, remove da foil keep on bakin ferr about 25 more minutes. Maw says youins jess needs to make sure its set. Cool it on a rack but get someone ta sit by it so the dogs dont get it. Serve it up wit whipped cream. 
Note: Serve wit Holiday Moonshine in yours best no chipped jug.

Hillbilly Black Soup / or Witches Stew

Howdyyyy Folks!  I'm here ta tell ya bout Maws recipe fer this month. Weuns likes turnip greens a lot. Maw likes ta make up a big ole pot ah Black Soup escecially at Halloween time.  Ya see, Maw tells all the youngons dat its witches stew cause the soup is so dog gone black and ugly.  So furr this month Maw shares her recipe furr Black Soup.  Maw says it taste best if youins cook it in a big black cast iron pot over ah fire.

Note:  City folks dont likes eatin Hillbilly Black Soup a talll.  City folks cant see what's in the soup cause it's so black so they jess stick their noses up at it.  Weeins here on da mountain juss loves it and weins loves it even better when we got a big ohe chuck ah cornbread and ah onion.  

5 hand fulls ah collards or turnip greens or / 3 cans
2 big handfulls ah chicken gizzards or livers / possum / city folk can use beef stew meat 
2 handfulls ah mountain mushrooms or / 2 cans ah whole buttons
1 cup ah dry pinto beans or / 1 can pinto
1 cup ah dry black beans or / 1 can
1 big fat onion chopped
2 more cups ah anythang dark and ugly that youins can eat
1 chopped tater if youins wants or 1 cup of instant potatoes
pore bacon greese in acordin ta taste and a big spoon ah butter
simmer ferr 6 hours.

Take your gizzards, liver or beef stew meet and fry up in a pan ta get it crispy.  Add chopped onions on top ah it. Fry some more. Once lookin good, dump it in a big pot ah 6 cups ah water dats boiling.  Now dump all dat there other stuff on the list in da pot.  When it all comes to ah boil, turn down and let simmer ferr 6 hours.  Now- right before servin, pore youins some bacon greese in and a big spoon ah butter.  Now pore youins some instant taters in ta make the stew gravy thick.
Condumint: 1 fat onion sliced wit salt pored on top.
1 big pone ah cornbread
milk 1 goat furr drinkin

Note: If your using this recipe as a Halloween meal, make sure you use whole button mushrooms.  The mushrooms look just like eyeballs floating in the blackish gravy.  It's great fun to tell all your little goblins that its eyeballs and guts.  hehehehehe
For a even better visual effect, make sure you use some whole spinach leaves in the soup so it looks disgusting!  Believe it or not this soup is absolutely delicious!  Ugly but delicious.

Vinegar Pie
Howdyyyy Folks!  I'm here ta tell ya bout Maws recipe fer this month. Ya see we been gettin loads and loads of maters out ah areee garden still so Maws been down at the trade market tradin off maters furr vinegar.  So..... naturally Maws been busy making vinegar pies. ummm good eatin! 

Note:  City folks dont eat vinegar pie to aufile much but those dat do make sure they come and get one from Maw cause she makes the best.  City folks will never admit to them there guest of theres- what the name of the pie is that theys eatin.  hummm we cant exactly figure out why neither but dats how them city folk are.

1 9-inch unbaked pie crust
1 1/4 c. sugar
1/4 c. flour
1 Tbls. grated lemon zest
1/2 c. cider vinegar
2 c. water
3 eggs, well beaten (if the eggs are small use 4 
1 Tbls. butter

Preheat the oven to 425 F.
Combine sugar, flour, and lemon zest in ah saucepan and stir um together until throuly blended. Add cider vinegar while stirrin or whiskin constantly, den add the water. Place over medium heat, bring da mixture to ah boil and cook, stirrin constantly, furr 1 minute. Remove from heat and stir a little of da hot mixture into da eggs, den stir the warmed egg mixture inta da remainin hot mixture. Stir in butter. Pour the mixture into the prepared pie shell & bake for 10 minutes at 425 and then reduce heat to 350 and continue bakin futr 30 minutes more. Remove da pie from da oven and let it cool completely before servin. The filling will seem quite liquid, but will firm as da pie cools. 
Do Not Pre Bake the Pie Crust!!!!! K

Mater Casserole
Howdyyyy Folks!  I'm here ta tell ya bout Maws recipe fer this month. Ya see we been workin hard in the garden and we already been gettin loads ah maters on the vine so Maws been fixin Mater Casseroles commin & goin for errie single event on da mountain!  It's a good dog-gone thang we like maters so much or else we'd be turnin inta a mater!  

Note:  City folks waste their time callin dis Too-mate-toe Casserole or Tah-mott-toe Casserole but we thinks its a bit of a waste ah breath to say it da fancy way so we likes ta juss say maters.
Ya know there aint nutten like home grown maters and you can juss ah bout eatum with errie meal.

2 tbs. butter or city margarine
1/4 cup ah chopped onions from the garden
4 slices of day old bread, cubed
3 large maters, peeled and diced, bout 2 lbs.
1/2 tsp. dry mustard
1/2 cup grated carrots
1 tsp. salt
1/8 tsp. pepper

Lets seee now- Maw says ta melt dat butter first, den add onions and bread.  Fry dat until its light brown.  She say ta save out 1/2 cup of mixture for the top, add the mander with all da other ingredients.  Pour into a buttered 6 cup baking dish and top with the 1/2 cup bread mixture.  Maw says ta Bake 15 ta 20 minutes.
Feeds 4 ah us but them city people get 6 stingy serving out-ah it.

Strawberry Stack Cake
Well...... the big party day is this month. Ya know, the 4th of July! Whyyyy we hillbillys jass loves the 4th of July cause we gat the perfect excuse ta do some hoopin & hollerin without our women folk beatin us on da head with a frying pan. We shorre loves this party month cause wese gats ta party all day long and wese gats ta eat Maws cookin all days long to. And ya know what?! Maw lets me gat the moonshine out right in front of erriebody this month too! Woooo hooooeeee!  The whole mountain side will be here and Maws gonna cook her famous 4th of July meal too. We like ta BBQ a nice pig or ah goat. Is takes care of dat part. Then Maw takes care ah all da fixins dat goes wit it. Wyyyy once we gets our bellies full and takes a little nap, wese gonna do a bit ah skinnie dippin den eat some more! Woooo Howdyyyy what a day it's gonna be!

This here recipe is a real favorite wit mountain folk and is triditional with our family at our 4th of July bash.  Why we found out that normally strawberry shortcake is the #1 dessert used by the city folks but weins thanks you'd like dis recipe much better.

Yourins Need:
1/2 cup sour milk or buttermilk
1/2 tsp. soda
1 fresh egg from the chicken yard
fresh strawberries cut up baby like, den soaked in 1 cup sugar in a warm pot.
1/2 cup shortening

Maw says ta mix all them ingredients together real good. But not da strawberries. Den add flour in ta make a stiff dough.  Now Maw says there aint no way she can tell ya how much flour youins gonna need cause she aint at your house. You's just gonna have ta look at it and feel it till its stiff.  If you's ah good biscuit maker den you will know. If you aint den you better get ta practicin.

Now, roll dat bough really thin and cut layers round, the size of the cake youins wants, den bake it till it looks good.  Maw cooks on the wood burning stove but she guesses you could try baking on 350 in city ovens first.

Now start stacking. Put your cake ring down first, den some strawberries, put another cake ring down, den more strawberries, den cake ring, den strawberries.  Get da picture?  You gotta have whipped cream dumped on top once ya serve it up.  Don't forget dat!

Well..... I dare say I told errieone that I wuz gonna give ya Maw's recipe fur her Hash this month.  That there recipe is an old fashioned recipe dats benn in tha family furr years.  Aint much to it but it shoree is good eatin.

OLD FASHION HILLBILLY HASH

1 cup cooked roast beef and 1/2 cup ah phossum - city folks like it to be lean beef but we kinda like da fat. City folk will use all beef and narrann any phossum at all. If you aint lucky enouf ta have phossum, den I reckon youins can use all roast beef too.
2 cups diced real small taters. - Now iffin yorr meat is real greacy just ad bout 1/2 cup more taters.  
1/2 cups ah chopped onion
salt and pepper
2 1/2 tsp. butter
boiling water

First thang, get yorr wife ta chop up da meat really really small.  If yorr wife is like my wife, then she shoreee is good wit ah knife!  Now go get your taters out ah that there cool creek.  You city folks can get um out of the frig.  Now let me splain somethin.  Them taters need ta be boiled and be cut up the day before and put in a cold place.  Cause ya see dem taters need to be firm when ya cook um.  Maw dont like taters to fall apart when she makes hash cause it turns it to mush.  So youins need to do what Maw says.  So take dem cold taters and salt and pepper um.  Now get yorr heavy iron skillet hot and put yorr butter ta meltin in it.  Once its melted add yorr chopped up meat in it and listen to it sizzle.  Nowans da time ta pore about 1 cup of water in the skillet too.  Youins ah want ta brown the meat on all sides.  I reckon it will take bout 15 minutes if youins cook it on medium heat.  Now add yorr cold boiled taters in and toss a bit.  Iffin it be to dry, den just add more butter.  Once dem taters are all hot and mixed all up, let it cook for bout 10 more minutes.  You mighten want ta splash it a bit with some white lightenin if it gats to dry.  Now us holler folk like ta eat it with fried eggs wiit da yeller runnin and dem Hillbillies on the mountain like dem eggs cooked hard.  Either way ya need to eat chicken eggs wiit it cause dats how its good.

HILLBILLY RIVERSIDE CATFISH

Gt' yor gear yor dog and yor milk goat and head down to da rivers edge.  Ty da goat up and let'er eat a nice clean spot ta do yor cookin at while ya fish.  Once ya catch a whopper....... whollip him and skin him and cut out his floats to take back to the youngons to play with.  Take that bucket dat ya brout and milk yer goat. Den toss that skinned fish in it to sit for a spell while ya fish for more.  Tell yer dog to sit there and watch over it so no other cridders come and eat the fish.  Now built yer fire and let your black iron skillet start ta warming while ya fish some more.  Once you catch a bucket full- ah- soakin......... then yor ready furr fryin.
Now take ya hat off yor head and pore some cornmeal in it and some salt and pepper.  Take each fish out of the milk and slang a bit of it off so it wont be soppy.  Put dat fish in yur hat and shake it till its all coated in cornmeal.
Fill yor black iron skillet with oil and when its sizzlin..... den flop dat fish in it to cook. Do this till all the fish are cooked.  You can den let yor dog drank the goat milk if he wants.

Now here come the best part.  Da Soppin Gravy!  While dat skillet is hot....... take that corn meal left in yor hat and put some in the skillet to brown real good in all that oil dats left in it.  Once its startin to smell almost burnt but it aint, then ya take the skillet off da fire.  This is fineeeee eatin when it come to soppin yor bread in it or spreadin the thick stuff on a piece of loaf bread and eatin it with yor fried catfish.  My Nanny taught me how ta do it and if you aint ate this yet den yor in for a fancy treat for shoreee!

Here's what I figore ya need:

7 small catfish or 5 whoppers
1 cluster of salt dat fits in the bottom of yor hand
bout-- 2 cups ah self risin Cornmeal
some pepper cordin ta how much you like pepper
corn oil or veggie oil
Moonshine to wash it all down wit

HILLBILLY BEEF STEW & LIMA BEANS

It takes 3 days ta make dis delicazee.  On da firs day cook supper and make beef cubes and what ever else strikes yurr fancy.  Scrape them leftovers from eryones plate in a bucket and put in the frig.  Day 2 cook supper again and dis time cook veggies like carrots and taters wit onions. Once supper is over scrape them there leftovers in da same bucket dat ya scraped them others in from tda nite fore.  Now, fore ya go ta bed take 3 big oh handfulls of dried lima beans and let um soak in water oheer nite.  On day 3 get dat fire hot and gat dat water ta boiling dat them beans err in.  While ya got dat going just go on down to yer garden and pick bout 4 maters out.  Cut them maters up and toss in the pot.  After they slow boil for bout an hourr....  pull dat bucket out ah the frig dat them leftovers rrr in.  Now dump it in da pot ah beans and let cook on low heat for bout 30 more minutes.  While Paw aint lookin pore ah bit of his white lightenin in too.  Serve wit homemade biscuits.

Now iffin ya want da City Folks version of it, den here it is too but bee warned......it aint nearly as good..
12 oz. Lima Beans
1 lb. bonelesss chuck stew meat cut in pieces
4 large carrots
2 stalks of celery
salt, pepper
tomato sauce
Soak beans overnight, drain. Add meat and cook 1 1/2 hours in boiling water. Add carrots and cook until tender. Season with salt and pepper and celery. Serve with tomato sauce and triangle sanwich things.

TATER LIMA BEAN GRUEL

Dis here recipe gats us through da hard times when our luck at trappin varmints gats low. This recipe is absolutely wonderful with warm and crusty baked bread to sop the gruel up with.  We dont waste our time on using a spoon at all. Wyyy wese jess use our fingers wit dis one.
 
 Ingredients:
1 small tater cut into thumb size dices.
2 cups of water
1 can of lima beans
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper

Preparation:
1. Cut up 1 small tater into thumb size dices. Boil over a medium hot fire for 10 minutes in 2 cups of water. 

2. Add 1/2 teaspoon salt, pinch of white pepper. Turn heat down ta low iffin your using a fancy stove. Iffin youins using the fire den just rake out some of them there coal to lower the heat. Now add 2 large tablespoon of butter. While stirring, add 2 tablespoons of flour. Keep stirring softly until all the flour is all dissolved and it makes thick soppin gravy. 

3. By now them taters will just be startin ta loose their square shape and start ta look more rounded, but still firm in the middle. Diss is exactly what youins want cause the outer edges of the taters that mix with the flour water is actually what makes the flavor of the gruel so good. Now poke yourins finger in it to see iffin it sticks on it. Iffin it does den youse just bout ready for soppin.

4. Now you city folks can add 1 can of lima beans wit its juice.  You country folks can use them dry beans youins got out of da garden dat you cooked last night. Youins need bout a cup of um. This will thin the gravy down a bit. The dish will turn out to be 1/3 gravy and 1/3 taters 1/3 beans.

Maws Comments:
You serve each person a cottage style bowl of their very own, with a huge wedge of warm crusted bread. No fork for this meal! You just sop up the gravy and chunks of taters & beans wit da bread and wash it down with a cold glass of milk. You just cannot eat this without the bread! Biscuits go well wit it and fried cornbread patties will work juss fine too. And remember, make youins man peal dem taters! No need in ya havin ta do it all ya know.

HillBilly food, Mountain food, Southern food, Soul food and Comfort food are pretty much the same thang. The only difference is maybe the type of varment that might be used. It really all boils down to good bone warming food that sticks to your ribs.

If you read our "Hillbilly Home" page then you know that "If it ain't fried it ain't cooked"!  Yep that's right. A whole lot ah mountain food and southern food is fried food and that's no lie!

Hillbilly can be a pejorative term referring to people who dwell in remote, rural, mountainous areas usually of the United States. Because of its strongly stereotypical connotations, the term is frequently considered derogatory and is highly offensive to those of Appalachian heritage. Hillbilly Baked Cornmeal Puddin' - You jess don't see folks cookin this dish much anymore unless youins a oldtimer.  Maw still cooks it ferr me cause I loves it so.  Most mountain people jess loves molasses and this here dish has plenty in it.  The chillins even loves it in our family so why don't cha give it a try. Varmit BBQ Bites - weins all know dat it's summer time now so we spend lots ah time down at the old swimmin hole either swimmin, fishin or bathin.  When we do.... we likes ta grill too.  Why nutton beats it dats ferr shore!  Now if youins don't mind workin a bit.... den you can catch yoreself some must rats in dat there waters edges and youins can grill um up with the rest of tha varmits dat ya caugh that day.  Yep youins shoreee can. Apple Butter Pumpkin Pie - Weins still chasin dat dog gone turkey!  Maw was gonna tell ya how ta cook um over da fire since its Thanksgiving ann all...but we aint caught dat winged cridder yet.  Anyways, Maw says shell jess tell ya how ta make "Apple Butter Pumpkin Pie" instead since its a Thanksgiving favorite in our clan too.  Iiiis told Maw ta cook one of them there Mincemeat Pies dat has da brandy in it. Ummmmm Ummmm!  But Maw says she aint gonna do it cause her last one watten fitten ta eat. She says dat it tasted like she used the whole bottle ah brandy in it and she didn't like it. Hillbilly Beefstew & Limabeans - It takes 3 days ta make dis delicazee.  On da firs day cook supper and make beef cubes and what ever else strikes yurr fancy.  Scrape them leftovers from eryones plate in a bucket and put in the frig.  Day 2 cook supper again and dis time cook veggies like carrots and taters wit onions. Hillbilly Black Soup - Weuns likes turnip greens a lot. Hillbilly Riverside Catfish - Gt' yor gear yor dog and yor milk goat and head down to da rivers edge.  Ty da goat up and let'er eat a nice clean spot ta do yor cookin at while ya fish.  Once ya catch a whopper....... whollip him and skin him and cut out his floats to take back to the youngons to play with.  Take that bucket dat ya brout and milk yer goat.........

Mator Casserole - Ya see we been workin hard in the garden and we already been gettin loads ah maters on the vine so Maws been fixin Mater Casseroles commin & goin for errie single event on da mountain!  It's a good dog-gone thang we like maters so much or else we'd be turnin inta a mater!

Lima Bean Tater Gruel - Dis here recipe gats us through da hard times when our luck at trappin varmints gats low. This recipe is absolutely wonderful with warm and crusty baked bread to sop the gruel up with.  We dont waste our time on using a spoon at all. Wyyy wese jess use our fingers wit dis one.

Strawberry Stack Cake - Well...... the big party day is this month. Ya know, the 4th of July! Whyyyy we hillbillys jass loves the 4th of July cause we gat the perfect excuse ta do some hoopin & hollerin without our women folk beatin us on da head with a frying pan. We shorre loves this party month cause wese gats ta party all day long and wese gats ta eat Maws cookin all days long to. And ya know what?! Maw lets me gat the moonshine out right in front of erriebody this month too! Woooo hooooeeee!  The whole mountain side will be here and Maws gonna cook her famous 4th of July meal too. We like ta BBQ a nice pig or ah goat. Is takes care of dat part. Then Maw takes care ah all da fixins dat goes wit it. Wyyyy once we gets our bellies full and takes a little nap, wese gonna do a bit ah skinnie dippin den eat some more! Woooo Howdyyyy what a day it's gonna be!
