Let's celebrate some great lobster & rice recipes in honor of all the National Food Holidays in our calendar!
Rice has to be one of the most common side dishes that you find with lobster or any seafood meal. Rice can go with almost anything because the rice itself can absorb flavors so well. Rice is a very versitile food. You can add all sorts of herbs, veggies and spices to adapt to any theme meal that your planning and all of them will be a hit at the dinner table. It's always a favorite food at any meal.

Lobster With Rice And Curry
1 onion, small, peeled, chopped
1 lobster, boiled
3 cups water
2 cups rice, washed
1 tablespoon curry powder
1 tablespoon butter
1 teaspoon salt
Remove lobster meat from shell, claws included.
Cut lobster meat in cubes not too small.
Put in sauce pan onion, lobster, rice, curry powder, butter, salt and water.
Put cover on sauce pan.
Let boil slowly for about 25 minutes.

Lobster Fried Rice
Juice from 2 lobsters & water to equal 2 cups
1 tsp. salt
1 c. uncooked rice
1/4 c. butter
1/4 - 1/2 c. chopped celery
Meat from 2 lobsters
1 cup Chinese style vegetables, drained
Use water and juice of lobster to make 2 cups. Bring to boil with salt. Add rice. Cover and simmer for 20 minutes. Remove from heat, fluff with fork.
Put in fry pan butter and celery, simmering until celery is half cooked. Add lobster meat and fry. Add rice and stir all together. Add more butter if dry. Add 1 can of Chinese style vegetables or 1 cup of frozen style. Stir and heat through.

Seafood Delight
1 lb. shrimp, scallops, crab, lobster, conch
Bacon (streaks of lean, streaks of fat)
1 lg. bell pepper
Onion
Thyme or bay leaf
Old Bay seasoning
Red cooking wine
1 can cream style corn
Rice or pasta
Cut in chunks. Stir-fry conch, scallops, lobster and crab along with the bacon until the bacon is brown. Then add onions, then bell pepper. When all these ingredients are done to taste, add shrimp for the last 2 to 3 minutes of cooking. After which, add 1 cup of red wine and stir-fry for about 2 minutes. Remove to a large pot and add can of corn. Let cook for about 15 minutes. Serve over rice or pasta. Serve with garlic bread to top this fantastic meal.
