Traditional Time for Egg Salads
It's very traditional in the United States for families to
hard boil eggs for Easter.  Most households usually boil
an average of 1 to 5 dozen eggs each year and join in
the tradition of painting and dying the eggs. Kids tend to
bring home even more eggs found from Easter Egg Hunts
which leads to many left over eggs & many Moms &
Dads try to think of ingenious ways to eat the left overs.

day. This holiday is referred to as a "National" day. 
However, we did not find any congressional records or

What is egg salad anyway?
Egg salad is part of an Anglo-American tradition of salads involving a high-protein or high-carbohydrate food mixed with seasonings in the form of spices, herbs, and other foods, and bound with an oil-based dressing. Its siblings include tuna salad, chicken salad, potato salad, ham salad, pasta salad, lobster salad, crab meat salad, etc.

Egg salad is often used as a sandwich spread, typically made of chopped hard-boiled eggs, mayonnaise, mustard, minced celery, salt, pepper and paprika.
